What's for dinner ?

I peeled 2 potatoes then made hash browns out of them and mixed 3 diced fresh Hatch Green Chiles in with them and mixed with a Chuck Roast I cooked all day and shredded... made Burritos.

I wish you lived close to me. That sounds good. :D

I could make you a list of everything HIFI doesn't like and it would be like three pages, but the stuff he does like would be a half a page. However, he did get some good news from his doctor on Friday. He is no longer diabetic and if he keeps doing as well as he has been, the doc might take him off of his other meds as well. He's lost over 50 lbs and the doctor said that all his numbers have improved drastically. The doctor was impressed. So I'm happy to make him taco's whenever he wants them.:D

That's great. What did he do to do this?

He switched to Pepsi Max, for starters. That helped out a lot, considering all he drinks is soda or beer. He switched to sugar free popsicles, and cut way down on his candy. But we haven't really changed much else. He started wanting taco's way more, but I don't mind.

Rib-Eye with Grilled Corn on the Cobb in husk....

Seasoned Rib-Eye with Canola Oil and Penzey's Chicago Steak Seasoning.

Heated the Lodge cast iron skillet on the grill with lid closed with all burners firing at medium high heat (apx. 500ºF). Removed the skillet and immediately placed on my grill's side burner over high heat. Seared the steak for 30 seconds on each side, then put the skillet back onto the grill with the lid closed. 1.5 minutes on each side produced a perfect medium rare.

I've paid $25+ for rib-eyes before at a restaurant, but it's never been as good as I can make them at home. BTW, I buy my rib-eyes for $5.99/lb at Trader Joes. A fraction of the cost of going out. :) :hungry:
