What's for dinner ?

HD MM got me all excited about corned beef being that it was St. Paddy's day and all. Alas I didn't have time to make one myself w/cabbage, but the grocery store had sliced CB on sale for the occasion at $4.99 so I bought a pound. Tonight I'll get some Swiss cheese, rye bread (or maybe pumpernickel) and some 1,000 Island dressing and make me up a Reuben! (I have plenty of sauerkraut at home already, aged the bhelms way which is to say stored in the back of the fridge for about a year - one of my staples!) I have never made a Reuben at home but it is no-doubt my favorite deli meal...

BTW, I have about 3lbs left from my corned beef cook yesterday. I let cool and plan on slicing paper thin to make Reuben's too.

I'm soooo looking forward to watching the NCAA Tourney while eating a nice big grilled Reuben sandwich!
 
I've never heard of this. Interesting.

Yes, I particularly like this thread and the other "meal" threads because of the wide and varied diets from various parts of North America. Just when I think I've heard it all someone here posts something I've never tried before and I'm off on another new food adventure.:)

BTW, I have about 3lbs left from my corned beef cook yesterday. I let cool and plan on slicing paper thin to make Reuben's too.

Our Reubens came out great last evening! We used an electric grille (about 15" x 24", Teflon surface) instead of the stove, set at ~350F. We buttered and grilled the rye slices (thin, deli-style) first then set them aside. Then we grilled the corned beef and sauerkraut for a few minutes turning a couple of times to brown both and towards the end put the Swiss cheese on the meat. Then we assembled the sandwiches on the grille including the 1,000 island dressing and grilled them quickly on both sides to warm the bread again, then quickly off the grille and onto plates with dill spears and deli-style chips (I often make my own, but no time last evening), then down the gullet and...wait!...I forgot to get photos...!! Oh, well. maybe next time, and to be sure there WILL be a next time....!

(Unfortunatly my team is playing only in the NIT, but they're still alive after the second round...!)

I made the exact same thing last night, only with homemade fries instead of chips. I sliced all of the remaining corned beef thin and still have about 2lbs left.

I'm looking forward to making some corned beef hash for breakfast this weekend! :hungry:
 
Grilled up some thin ribeye steaks with a little garlic and herb. For the sides, buttered noodles with a little onion and parsley, and some marinated cucumbers.

yes...my child was over this weekend. She loves that stuff... ;)
 
Lemon-Herb chicken roasted in the grill on a cedar plank.

Couscous stuffed bell peppers.

Shrimp skewers marinated in garlic and beer.

...and a nice chardonnay to finish it off... :)
 
BBQ Pork Chops lathered in sweet baby rays (spiked with a little Jim Beam) :)

Buttered noodles and marinated cucumber salad. (daughters favorites)
