What's for dinner ?

One Tamale made from the pork butt smoke in the Oklahoma Joe...
Still cooking in instant pot.
Cook was:
2 Pork Butts, 1=3 lb, 1=7 lb
7. 5 hours in smoker, shredded and put half in air fryer at 390 for 9 minutes
Other half in Instant Pot in sauce, high pressure 5 minutes. (air fryer half mixed in after cook)
Sauce:
5 NM Chile Mild
7 NM Chile Medium
4 Chile Anchos
1 White Onion in quarters
1 tbs minced garlic
1 tbs dry oregano
1tsp ea beef, chicken and tomato bouillon powder,
2 cups water, high psi cook 12 minutes, add salt then blend with several small tomatoes and 2 fresh jalapenos.
Store bought masa, added melted butter/bacon grease and 1 cup sauce then mixed.
Spread masa on hojas then loaded with meat and sauce and stacked in Instant Pot, cook for 42 minutes high psi, on 3rd batch now...
Filling has great smoke flavor, little heat, good flavor.
Ran out of masa so have half the meat left... (wasted first 2.5 lbs of masa with off flavored lard)
Edit: ended up with 30 tamales...

Stuffed peppers with ground beef, Italian sausage, rice, marinara and mozzarella cheese. Milk Stout while cooking, water with the meal.

Made this for lunch;
Browned 1lb cubed brisket, roast and 1 lb hamburger meat, put in crockpot.
Roasted 5 medium NM red chiles, 4 chile anchos, 3 chile arbols and de seeded blended with 3 dehydrated jalapeños and 1 tablespoon oregano.
Added 1/2 tsp beef & chicken bouillon plus 1 tsp tomato bouillon, 1cup water, tomato paste & diced tomatoes.
Small bowl at lunch, large bowl with 1 diced beef Frank, bread and mustard for supper… tasty.
 
Put a pot-roast in the crock-pot. Came back in thirty minutes and the lid was still cold. After some troubleshooting, I need a new crock-pot. 😢 Anyway, I moved on to plan B. Broke out the cast iron dutch oven and transferred the roast. Low and slow for 3 hours 300 degrees in the oven. Added potatoes and carrots. Adjusted the liquid level and back into the oven for another 1 and 1/2 hours. Pulled out the roast, made a slurry of water and flour. Added slurry to the pot and thickened the gravy for fifteen minutes. While that was happening I broke the roast up into large chunks. When the gravy was thickened I returned the meat to the pot and gently coated the meat with the gravy. Served over buttered egg noodles with fresh baked bread. Comfort food X 1,000. Oatmeal stout. Just what I needed.
