Here is the current soccer being broadcast in HD, that I am aware of. Please add any others.

Major League Soccer:

ESPN2-HD on Thursdays
HD-Net on Saturdays
(ABC-HD and/or ESPN-HD to show All-Star, Friendly and Finals Games)

La Liga:

World Sport HD on Sundays

UEFA Champions League:

ESPN2-HD has matches upconverted from 576i (so they look better than SD) on some Tuesdays and Wednesdays (including May 1st and 2nd).

We're hoping they will show the Final in true HD (as they have in the past).

As far UEFA CL goes, the only final shown in HD was last year, '06. The '05 final was produced, but not shown in Hd, in the US. It was shown in HD in some European countries. That was the first final produced in HD. Of course in would be nice to see it in HD, as it would to start seeing some of the other high profile games , let's say from the q/finals on.

Sky in UK shows most or all of them in HD on Sky Sports HD 1 and Sky Sports HD 2.
But the upconverted matches on ESPN2-HD really do look significantly better than the SD version. The main drawback over the HD is not the small amount of resolution, but rather the lack of 16x9 widescreen - which lets you see more of the field at a glance.
By the way, the Thursday night MLS matches on ESPN2-HD are exceptionally good PQ, sound and production values. The level of play is starting to get close to the European leagues as well. I think that European soccer fans who have no other soccer this summer will not be disappointed watching that (and the other HD match on HD-Net on Saturdays).
