Back when I first got my H3 with 2 J3's, I experimented with one of them by unplugging the coax but leaving the Ethernet connected. After some chaos and confusion with the network settings, it worked great! Fast forward to today when I experimented again. No joy no matter what I reset.

Is there some magic setting that I should have used to get this going, or is that now prohibited? IIRC it's on J537. Maybe 536.

I have a J2 working over ethernet right now. That J2 used to be hooked up via coax years ago until I moved a J3 into that location. I simply activated the J2 and plugged ethernet from the Hopper 3 directly into the J2 and it works fine.

I actually got to thinking about it and unplugged my ethernet cable from the Hopper to the J2. Then I plugged a short ethernet cable between my LAN hub to the J2 and that worked too! Of course the Hopper is also plugged into the same LAN to get internet.

I have been ethernet only through my LAN for years. Works perfectly.

I unplugged the coax and left the Ethernet which is (through switches) able to communicate to the H3 on the same LAN. It never reconnected to the H3, despite restarting it and resetting the network numerous times. I didn't do a power plug reset, though.

What am I doing wrong?

Try the power plug reset first. If that doesn’t get it don this:

Temporarily move the Joey to the Hopper 3 location. Place an ethernet cable from the Joey to the Hopper. Power up the Joey and it should connect to the Hopper. You can check this by powering up the Hopper. Press Home 3 times on the remote. Go diwn to Whole Home. You should see all the receivers connected including the Joey you just connected directly to the Hopper. If you do, bring the Joey back to its original location and hook it up. You should link up to the Hopper provided your ethernet is connected to the same LAN the Hopper is.
