I'm considering having a couple Dish receivers output on the RF 3-4 output, and send those signals to the rest of the house.
Will having one set to channel 3 and the other set to channel 4 cause interference with each other?
I remember hearing once that 3 & 4 were too close together, but wasn't sure.

It depends on the quality of the modulator in the STB, and there is only one way to find out! Try it.
If you want to do a quick check combine the 2 signals and feed them to a tv in the same room, change the channel on the tv from 3 to 4 and look at the picture. If you notice interference in either or both channels turn off one of the STB's and see if it clears up, if so this won't work very well for you.

If you balance the outputs you can use 3 & 4 as output channels but you would be much better off to use ch 3 or 4 and get a UHF modulator for the second receiver, less costly with better picture quality.
