I have my dish receiver in one room and want to run the TV1 & TV2 ourputs to the location of TV2, (75 to 100'). What kind of cable do I need to use for the best performance to an AV receiver located at TV2. I currently have an AV receiver located upstairs at the Dish receiver and I would like to use a switch

Sorry about mis spelling cableing. I have heard that I can do long runs with CAT5 cable and simply solder on RCA Plugs at each end. Any thoughts? It certainly would be easier to pull through walls and the attic than a bundle of coax.
 
Can we please have a few more details? What kind of receiver are you using? what is the purpose of getting the TV1 signal to your TV2 location (ie. do you want HD at TV2, or do you just want to be able to watch either tuner?) How is your current system getting the TV2 signal to your TV2? There are many ways to accomplish what you want, but the process used will depend on what equipment you have, and what the end goal is. Thanks

As it stands now I have my dish (625) unit in the upstairs office and the standard 1 dish two coax set-up with the second TV in the downstairs family room.

Part 1: I currently have a Stereo component setup with cd, dvd, and turntable.
My plan is to connect the stereo and its components to my computer and download my 1950s LPs to DVDs or CDs. (this much is done)

Part 2: I also have AV control center with tuner and video and audio inputs and will accomidate A & B speakers with front and rear speakers on the A circuit and front only on the B circuit. This unit will go downstairs and will take both of the TV1 and TV2 audio inputs to amplify them to speakers in the family room and on the patio. I may also want video outputs in these locations so that i can use a small TV as a monitor. I will be able to use the amplifier for the audio for normal TV programming and I will be able to use either of the Sirius music channels downstairs for easy listening or background music. I will also be able to monitor the a/v from both TVs in the downstairs location. Using PIP we could have a lot going on........... The routing for the Audio and Video Cables is complex and will be 60 to 100 feet.
 
Unless this just seems more complicated than it is, it is probably beyond the scope of things I can help with via this forum (something I would need to see to be able to visualize, before I could recommend what you need to do). From what I understand you need stereo audio from both TV1 and TV2 in a location 60 - 100 feet from the current receiver's location? If this is the case, your best bet would probably be to move the receiver to that location, however that can be very difficult to describe how to do without seeing everything first. if you're wanting to do everything it sounds like you want to do, you may just want to hire a construct cabling specialist that is familiar with dish network dual tuners (or a local dish network retailer) to come out and handle all of this. It all sounds like it can be done, but it is well beyond the intended capabilities of the system.
 
You did not indicate which dual tuner receiver you have.

If it is a 622/722 you would probably be better served by getting a second receiver.

Matter of fact, even if it is a 625, a second tuner is better.

You could have independent tuning and just run one RG-6 from the dish/switch to the new receiver.

A 211 might be free and only cost you $7 per month.
