Per the thread title, I'm looking for anyone's ideas for making breakfast fajitas. I'll be serving these at our tailgate this week. Due to our limited available prep time I need to cook the ingredients in advance and bring them to the tailgate, preferrably hot so we don't have to take time to reheat everything.
Tentatively I'm thinking of having on hand: soft tortillas, shredded bacon, sausage, scrambled egg, shredded cheese, salsa, picata, taco sauce, sour cream, chopped onions, chopped mild peppers, pepper rings in various heats, and some "secret sauce" (mostly habanera). Tailgaters make their own from the above.
What else works well for you?
I'll probably serve Margaritas. What else goes well? (Beer, of course!)
Also - What's your preferred method of keeping stuff hot while in transit? I have one of those "silver cloth" insulated bags and also a reversible cooler/warmer chest (Peltier transducer type). I've never used it as a warmer however so I'm not sure how well that mode works; the cooler is OK but not great. I was thinking of preheating the chest, warming everything up Sat. AM, putting it into that insulated bag, then into the chest which will then run off my car's aux. power connection. It will be about an hour from when I leave the house until we can start eating.
