Why does Guide (all subscribed) list X rated channels?

The safest way to avoid unwanted channels (porn, shopping,VOD, On-Demand, etc.) is to create a Favorite list. Take your time, and add what you want to your list. Now, you have to create a separate list for each Hopper and Joey. The nice thing is you can keep your list as default within Guide. This method makes it so easy to scroll the guide.

Even safer is to enable parental controls and lock out the channels you don't wish to see, then they can never be accidentally turned on if you favorites list gets corrupted or deleted.

One should wear some protection if watching those "X" Channels

This one totally goes over my head. I'm afraid to ask why.

Well for the prices Dish wants for those Channels I'm pretty sure they're at least XXX Rated. But by the looks they're in SD, except for 1 of them in HD. This is the 21st Century you would think Dish could at least offer them in HD if they broadcast in HD. But in reality they should be in 4k and then when the good scenes come on, your screen blanks out the an HDCP error.

Well, maybe after the tech visit, I can have a good laugh too. Right now, no laughs. SWMBO slightly less than pleased.
