Grilled some chicken breasts on my foreman. gave one each to the the kiddos, then shredded the last one, made a couple sandwiches for me with mayo, garlic pickles, lettuce and ranch. Should have toasted the bread, but it was still pretty good.
Tacos...
I put a medium sized Bell Pepper, 1/2 small white Onion, 1 Hatch Green Chile & 1 Dried Red Chile in food processor, added sliced portabello Mushrooms in a skillet and topped with 1lb lean ground beef...
Ended up with 4 Tacos & enough left over for 3 Burritos for work...(grated sharp cheddar cheese added)
Not bad, I buy a couple of 8 piece packs then wrap 2 pieces in foil & freeze for work (takes care of 8 lunchs)... I haven't had KFC in years (wrong end of town)
