Carne Adovada, something I truly miss from New Mexico. I love it. I have an Instant Pot recipe for it that I am going to try one day.

Indigenous people taco. Fry bread, pinto beans, seasoned ground beef, hatch green chile sauce, onion, lettuce and tomato. Water.
