In addition to Ubuntu, I'm a fan of openSUSE and CrunchBang Linux - A nimble Openbox Linux distro . Crunchbang is a very minimal distro, the current version of which is based on Ubuntu. The developers have moved to Debian as a base for the upcoming release, though.
