Looking over the channel assignments on the new 129 sat it would now appear that all my HD locals (Grand Rapids & Kalamazoo) are also on that bird, so does that mean I can dump my wing dish that I have been using since I upgraded to HD?

I have the same locals as you. But I have noticed the signal on 129 is lower than 61.5. In good weather 129 will deliver the signal, but when the storms start to come in from the west 61.5 will take over. This has stopped the rain fade for the hd channels. I decided to leave the wing to eliminate hd service dropout.

You will need a 1000.2 Dish if you want three sats on one. Or, you could spin the wing dish around for 129 which will likely give you a stronger signal. I'd call Dish to see how much they would charge to have someone come out to install the 1000.2. If you decide to use the wing, re-post and someone here can help with the alignment.
