Will I still be able to play all of my HDDVD's if I use component cables instead of HDMI?

Yes, you will. You will even save yourself one headache - HDCP.
There is a chance that some years from now ICT (image constraint token) will be introduced
and cut the vertical resolution in half when going out over analog - but it is too early to worry about it.
