Guy here at my house for Christmas dinner, and who works in the field, says they can now run HDMI over a single RJ-45. He's demo'd it to customers. That might be an easy answer for some.

yes, it can. it should be cat6 and the pairs carry r,g,b and ddc or y,cr,cb and ddc for component.
