Basic setup question

I just had Dish Network installed today. They installed a 301 rec. (have yet to talk wife into HD rec yet =P ) I noticed that there is a screen size option, does this actually make a difference if you set for 16x9 if you are using a widescreen TV connected through the S-video output? Thanx.
 
Can't seem to tell difference, is it supposed to keep you from getting a stretched image?
 
It is listed in the setup menu under picture size and you can choose between 4x3 or "16x9 (cinematic)". Granted I am not able to tell much of a difference between them, but certain channels that were stretched slightly do not seem to be any longer. I dunno. system info says DP301 software P207 on both of my 301's and they both offer that setting.
