I have had a 501 for several years. When it was new I had 80 hours of space. I would record shows and always delete them right after I watched them. Most shows would be stored about a week before being watched. Over time my time remaining would decrease. Recently I had deleted all stored programs and it said I had about 31 hours. What happened to my other 50?

I don't believe that a 501 ever had 80 hours of space. I've had my 501 for about 4 years now and it has always had about 30-35 hours.
You must've had 50 hours of a still shot - like the "You have a Dish 500" channel.
