Who's cooking on the Fourth?

Of Interest:

We expected 10-12 to show and boiled up 20 lb shrimp, heads on and fried up 8-10 lbs catfish fillets. 8 showed.

One woman insisted on NO heat whatsoever. Well, I don't like it too hot, so I agreed to put very little in. Not good enough. OK, less than half the amount of cayenne. She went to my wife. No cayenne at all. Shrimp was good, but not great. But that lady didn't like it anyway.

Sigh. The good news is, I will never listen to anything she says again. She eats my food, or not. She had the catfish option.

Gave a lot of shrimp away, for people to take home. STILL eating shrimp. Cold shrimp. Shrimp salad. Shrimp sandwiches. Soon, scampi & creole. Probably finish it off over the next couple of days, before it spoils and needs to be tossed.

The new 60 QT SS pot is REAL nice, and it fits in my dishwasher. But it overlaps just a bit over the edge of the round burner. Anyone know if the larger, heavier square burners put out more heat, or are just larger?

Lol! Sorry, I have to laugh...that's a pretty funny story. Can I ask who "she" is? A family member?

I can't get food spicy enough, so I always have to lower the heat a bit when I'm cooking for others...(and they still complain sometimes :))
 
Even if 12 people showed up, that is a lot of food.

I planned on plenty of leftovers, for some to take home and for later use. But this was ridiculous. Anyway, peeled all that was left last night (3 "1 gallon" bags) and made scampi and shrimp salad. A lot of shrimp salad. Then found a small bag we'd overlooked......

MiL's SiL. They all grew up together. She's becoming a picky picky eater. And thinks she's the doyenne of the family.

I'm something of an outcast in NOLA, as I only use enough Tabasco for flavor, not for great heat. Ahhh, if it weren't for the crime and economy, I might move back and eat myself fat. Happily.
